Who’s tried salsify?
Have you tried salsify? Have you even heard of salsify?Â
Salsify (Sahl-seh-fee) is known as the oyster plant due to its flavor. It is a widely grown root crop in Europe. Roots grow to the size of a classic long tapered carrot. The white heirloom variety we will be growing has cream colored skin. This variety has a mild flavor and young roots can be eaten raw or in salads. Mature roots are best eaten cooked.
Salsify contains fibre, vitamin C, B6, folate, potassium, manganese and a little bit of protein, calcium and iron. Nutritionally, it has been likened to kale, particularly in that it is low in calories and great for your digestive system.
Check out some cooking tips and recipes on the Salsify page.Â
We’ll be experimenting growing salsify this season. We look forward to sharing it with you!
