Heirloom. Salsify (Sahl-seh-fee) is known as the oyster plant due to its flavor. Widely grown root crop in Europe. Roots grow to the size of a classic long tapered carrot. Skin is cream colored and the flavor is said to resemble oysters. This variety has a mild flavor and young roots can be eaten raw or in salads. Mature roots are best eaten cooked.
Salsify contains fibre, Vitamin C, B6, folate, potassium, manganese and a little bit of protein, calcium & iron. Nutritionally, it has been likened to kale, particularly in that it is low in calories and great for your digestive system.
